Double Chocolate Muffins



 If I had two words to describe these muffins it would be: Easy and Delicious. Done. These are too good to pass up making and also too simple. Double the chocolate, double the deliciousness right? The giant chocolate chunks make these muffins extra special.


Double Chocolate Muffins

Makes 24 muffins

2 cups                a.p flour
3/4 cup               cocoa powder
3/4 cup               sugar
1 tbsp                 baking powder
1/2 tsp                salt
1 1/4 cup            milk
2 eggs
2 tbsp                 butter, melted
1/3 cup               vegetable oil
1 tsp                    vanilla
1/2 cup               chocolate chunks

Preheat the oven to 350 degrees. Grease a large muffin tin. Combine the flour, cocoa, sugar and baking powder in a large bowl. Combine the milk and the melted butter. Add the oil, vanilla and eggs, whisking together. Add the liquid ingredients to the dry ingredients and beat for no more than 30 seconds, it's OK if it's lumpy over mixing will result on misshapen and hard muffins. Fold in the chocolate chunks carefully. With an ice cream scoop divide the batter into muffin tins. Bake immediately for 20 minutes. Let cool before serving. Enjoy!


It's as simple as that. Stupid easy. They are great in the morning as breakfast and easy to pack for lunches. And they are chocolate. So why not?

    1. I haven't tried freezing them! But I assume if you freeze them in resealable bags, then put them in the fridge the night before you want to use them and reheat them in the morning , they should work fine!
