Tea Time Streusel Cupcakes
I'm back with more Cupcake Summer fun! Sorry, I would have posted something yesterday but a certain machine wasn't working properly... :( So instead I brought you cupcakes. They are Streusel Cupcakes! Yes! Or they could be called French toast cupcakes/ Cinnamon cupcakes/ Apple pie cupcakes- you know, I think you get the picture! These were also a suggestion by Iron Whisk!
I love how they perfectly fit in the bottom of these tea cups! Cute! They are my mom's favorite set! Though we never use them because they have to be hand washed... These cupcakes would match so well with a cup of earl grey tea or at a little tea party!

Yellow Cake
Makes 35 mini
1 1/2 cups a.p flour
1 cup sugar
1/2 tbsp baking powder
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1/2 cup butter
2 eggs
1/2 cup sour creme
1/2 tbsp vanilla
In a large bowl whisk together a.p flour, sugar, baking powder, nutmeg, salt and cinnamon. Next, with beater combine the butter, eggs, sour creme and vanilla. Beat until smooth. With cookie scoop transfer into baking cups and place bits of streusel on top. Then bake for 10-12 minutes.
Streusel
1/4 cup brown sugar
1/2 tbsp sugar
1/8 cup a.p flour
1/4 tsp cinnamon
pinch salt
2 1/2 tbsp cold butter, cut into chunks
In a small bowl combine all ingredients, but butter, with spoon. Next add the cold butter and squish the ingredients with hands until combine. Or use a pastry cutter. Chill for about 15 minutes.

Butter icing recipe

2 tsp cinnamon
1 tbsp brown sugar
If you want to know how I did the icing, I used a 2A tip, applied pressure close to the cupcake and waited until the icing filled up as much surface area as I wanted. I use to think it was difficult before I tried it, but it's super easy. Take it from a 13 year old! You can use that technique with french tips, 1M tip or a 2D tip! Heck you could probably use the drop flower technique and it would look fabulous!
Quick, brew up a pot of tea and bake these so you can share them with your friends! And if a cup of tea isn't your cup of tea, they would make a great afternoon snack!

Yes! It was a chewy sugary addition! My favorite part was the icing, but hey, I love me some icing. :D
