Mocha Cupcakes




Sometimes I just sit here a while thinking about what to write.
Well, what is there left to say? Mocha Cupcakes. Pretty much sums up the post, but I'll keep on talking anyways.

I had a couple of incidences with these. First, I ran out of white baking cups, so I had to use these fancy ones I was saving...
Second, I also ran out of chocolate chips. What?! I know, crazy! How, in my house, could we be out of chocolate chips? So instead I had to use huge, delectable, melt in your mouth, baking chocolate chunks. Torture, right?
Third, They baked weird. Most of them had a tall domed top. Which doesn't normally happen, and if it does I can usually cover it up with icing. But today was different, I wasn't making icing. No hiding anything with them. But they do look pretty cute! Plus they look like chocolates with the silver wrapping!

Mocha Cupcakes 

1/4 cup                                 hot water

1 1/2 tbsp                             instant espresso powder
1/2 cup                                 buttermilk
1/2 cup                                 vegetable oil
2 eggs
1 tsp                                     vanilla
1 3/4 cup                              a.p flour
1/2 cup                                 sugar
1/2 cup                                 brown sugar
3 tbsp                                    cocoa
1 tsp                                      baking powder
1 tsp                                      baking soda
1 tsp                                      salt
1 1/2 cups                             chocolate chips

Preheat oven to 375 degrees. Line cupcake tins with wrappers. Dissolve the espresso powder in the hot water. Whisk together the buttermilk oil, eggs and vanilla in a medium bowl. Next add the espresso mixture. In a separate bowl, mix flour, brown sugar, cocoa, baking powder, baking soda and salt. Add buttermilk mixture and stir until just combined. Mix in chocolate chips. Do not overmix!
Scoop the batter into the liners and bake for 10 minutes. Let cool and drizzle over icing or dust with icing sugar.




Be sure when you're eating them you have a glace of milk or coffee nearby, you'll need it!
Though they are really delicious, too bad there won't be any left for you to try some!

    Usually muffins/cupcakes come out with a round top if not all your ingredients are at room temperature.

  2. Oh, ok thanks for the tip! I didn't know that. What about milk? I mean I know I forgot to put the eggs at room temperature but I never knew it mattered!

  3. I like the look of the round top as you are not mounding them up with icing. Makes them look more like chocolates!
