Paleo Gluten-Free Decadent Brownies


 

When I make dessert with my own interests in mind I don't bother to look at the ingredients (most of the time). When I have my mind set on a dessert, I plan on making it. I don't want to end up doing it twice, or mess it up by using bizarre ingredients. But, when I make desserts with my sister in mind, it's a completely different story. ...Well not really, just the opposite of what I told you I do when I make sweets for myself.

When you're making things Paleo, a lot of things can go wrong. Because they don't use sugar or flour, so if you're baking, it can be difficult at times. That's why I don't make many desserts for my sister.  So, she got me a book, Paleo Indulgences. I decided to take a crack at it. There were lots of cool looking recipes, I wanted to try out the Decadent Brownies. They were fairly simple to create. Then it was time to taste.


  Well, smack my butt and call me Judy! These were the best brownies I had ever eaten! So moist and rich with a slight coconut-y taste to them. Oh my gawsh! They didn't need any sugar, or all purpose flour, just good whole some ingredients. All natural and I think that's what makes them the best! Get your sleeves rolled up and put on an apron because it's baking time! This recipe was adapted by, with a few changes, Tammy Credicott, author of Paleo Indulgences.

Paleo Gulten-Free Decadent Brownies

2 oz              70% dark chocolate, chopped
3 tbsp           coconut milk
1/4 cup         organic cocoa powder
3 tbsp           coconut oil
3 tsp             tapioca flour
1/4 cup         coconut flour, sifted
1/4 tsp          baking soda
1/4 tsp          salt
1/2 cup         pure maple syrup
1/4 cup         light olive oil
2 eggs           whisked
1/4 cup          organic canned pumpkin
1/4 tsp          vanilla

Preheat the oven to 350 degrees. Place chocolate, coconut milk, cocoa powder ad coconut oil in a saucepan over medium heat until melted. Place the tapioca flour, coconut flour, baking soda and salt into a large bowl, whisk to combine. In a small bowl mix all the rest of the ingredients together, and add chocolate mixture. Then add that whole mixture to the dry ingredients. Beat with hand mixer until fully incorporated. Pour batter into a greased 8x8" pan. bake for 25 minutes. Let cool and enjoy!



I hope you're willing to try these really excellent brownies, you'll never switch back to non-Paleo brownies again! I swear on that. Moral of the story, be willing to try different things sometimes it will leave you with a great experience, sometimes it won't. But, at least you'll get terrific brownies out of it.

  1. Yes, these brownies truly were DECADENT! So delicious! If no one told you, you'd never know you were eating a 'paleo' brownie. Not dense and hard, they're fluffy and yummy! Thanks to my wonderful sister for making these for me. : )
